Grilled zucchini spears combine with Kalamata olives, sun-dried tomatoes and feta in this truly Greek-inspired dish.
Preheat grill to medium-high heat. Cut zucchini lengthwise and then again to form spears. Brush with 3 tablespoons Girard’s® Greek Feta Vinaigrette Dressing. Grill spears on each side until lightly charred and tender, about 3 to 5 minutes total cooking time.
Arrange grilled spears on a serving tray and drizzle with remaining Girard’s® Greek Feta Vinaigrette Dressing. Top with cheese, olives, tomatoes and parsley. Serve.
