Soften cream cheese 30 minutes at room temperature and mix in grated onion. Turn caviar into strainer; rinse gently with cool water. Drain on paper towel to blot up excess color. Choose rectangular or oval platter at least 9-inches long. Line each long side with strip of waxed paper to catch stray grains of caviar.

To shape cheese mold cane, with plastic wrap protecting your hands, shape cheese into log 12-inches long. Curve one end into arc forming handle of cane. Size 8-inches long, 5-inches wide. Cut strips of foil 1/2-inch wide, place diagonally on cane 1/2-inch apart. Fill unprotected surfaces with caviar. Lift foil strips straight up. Remove wax paper liners. Chill one hour before serving. Serve with unsalted crackers or toast rounds.
