Step 1:

Season chicken with five spice powder, salt and pepper. Heat oil in skillet over medium heat. When hot, add chicken breasts and cook until golden-brown on bottom, 6 to 7 minutes.

Using metal tongs, flip chicken and continue to cook until other side is golden brown, 6 to 7 minutes more.

Step 3:

Remove from heat and let rest for 5 minutes. When cool enough to handle, shred chicken.

Step 4:

Cut beets into 1/8-inch thin slices. Stack and cut into thin matchsticks. Repeat with remaining vegetables and pear or apple.

Step 5:

Combine julienned vegetables and fruit in large bowl with basil and mint. Add shredded chicken and dressing. Season with salt, pepper and a pinch of chili flakes. Toss to combine. Top with roasted peanuts.
