Preheat grill to medium high and spray with a heavy coat of cooking spray. In small bowl, mix 1/4 cup Girard’s® Champagne Dressing, mint leaves, and juice from 1 lime. Coat pears with cooking spray and place 2 lime halves on a plate to use at the grill.

Brush the flesh side of the salmon fillet with dressing mixture and set skin side down on hot grill. Place limes flesh side down on grill, the heat will help release juices. Cook 3 minutes. Squeeze additional lime over fillet and brush with additional marinade. Cook 2 to 3 minutes more until the center of salmon flakes and separates with gentle touch. Place pears on grill, cook 2 minutes per side until warm with grill marks.

Divide spinach between 4 serving plates. Add heirloom tomatoes, grilled pears, and grilled salmon. Top with additional Girard’s® Champagne Dressing, mint leaves, salt and pepper.
