marinate the fish
Step 1:

Preheat oven to 400°F. Lightly brush a baking sheet with olive oil. Place fish in bowl. Cover with dressing. Season with salt and pepper. Let marinade for about 20 minutes. Place fish into a roasting pan. Discard marinade.

Step 2:

Combine tomatoes, olives, onion, garlic, capers, parsley and cayenne in a bowl. Drizzle with dressing. Season with salt and pepper. Toss to combine.

Spoon tomato mixture over fish.

Bake about 15 minutes, or until the fish is firm and flakes easily with a fork. Serve hot, with a generous amount of tomato-olive mixture spooned over each piece of fish. Serve with lemon wedges.
