Prosciutto-Wrapped Asparagus With Hard-Boiled Egg
A drizzle of balsamic, plus a heap of chopped hard-boiled eggs, turns tender asparagus enrobed in temptingly salty prosciutto into a worthy side dish.

Prep Time: 10 Minutes Cook Time: 15 Minutes
Place eggs in pot. Cover with 1 inch cold water. Bring water to rolling boil. Turn off heat and cover pot. Set timer for 10 minutes. Transfer eggs to ice water bath.
Peel and chop eggs.
Snap off woody ends of asparagus. Wrap each asparagus stalk with slice of prosciutto.
Place asparagus on baking sheet. Drizzle with dressing. Season with salt and pepper.
Place baking sheet under broiler for 3 minutes, flip asparagus stalks, and broil for another 3 minutes, until a bit browned and crispy.
Arrange asparagus on plate. Serve with chopped egg on top. Garnish with chives.
