Barley, Grapes and Celery Salad
The addition of pearl barley makes this sweet and crunchy salad hearty enough for a satisfyingly delicious lunch or dinner.

Bring 5 cups water to a boil. Add barley and a pinch of salt. Cook barley 30 minutes or until tender. Remove from heat, strain and rinse with cold water to cool. Place in a bowl.
To the same bowl, add grapes, celery, parsley, scallions, almonds, tarragon, salt and pepper. Add Simply Dressed® Champagne Dressing and toss together. Arrange lettuce on plates and top with salad mixture and serve.
